SMALL BATCH
Dissolve 1/4 cup sugar into 2/3 cup luke warm water (not to hot--to not kill yeast)
Add 1 and 1/8 teaspoon instant yeast
Let it sit 5 to 10 minutes
Mix together 1 and 1/8 cup flour and 1/2 teaspoon salt and 1/4 Tablespoon Baking Powder
Add in yeast sugar liquid and 1 T vegetable oil.
Knead
The lady in the video kneaded in mixer with bread hook for 8 minutes (glass test).
I added flour until the dough was not sticking to the mixing bowl.
Let dough sit covered for 1 hour. I let it sit in a warm oven.
Shape into siopao. Let the siopao sit for 20 minutes.
Place in steamer. Steam for 15 minutes. Turn off steamer and leave the lid on to finish for another 10 minutes. Do not lift lid.

1 1/2 cup warm water
1 Tablespoon instant yeast
3 T oil
2 1/2 cup all purpose flour
2 cups cake flour (or all purpose if you do not have cake flour)
1/2 cup sugar
1 teaspoon salt
1 Tablespoon backing powder
