2 cups uncooked rice (dried grains)
1 cup tapioca flour
1 and 1/2 cup sugar
1/8 cup coconut oil
1 cup water
Steam time--10 minutes. Some of the top tier was raw. I would remove the bottom tier at 10 and give the top tier an extra 3 minutes steaming next time.
The batter needs to be between 110 and 115 degrees F before adding the yeast. To raise the temperature I left the blender running and testing the temp at 2 minute increments. My original idea of heating 1/3 of the batter in a saucepan before adding back in did not work because the batter contains sugar which is prone to burning and the batter thickens too quickly. Perhaps upping the water a lot in a saucepan attempt would have been a way. People in the videos were using a sauce pan rue for temperature upping of 1 cup rice flour to 4 cups water.
This recipe filled 20 floral molds.
Mom's Recipe
2 cups rice flour
1 cup other flour
1 cup sugar
1 package instant yeast
2 cups water
Mix together. Cover and let rise for an hour. Stir. Pour into molds. You can let it sit in the molds for ten minutes. Mother has bigger molds and lets her molds steam 12-15 minutes. People in videos with my small molds let theirs steam for 8 minutes.
This batch makes 20 larger rice cakes for mother.
