Nicole B's Daughter's Recipes for Vegan Mac and Cheese

 Easy Cheese Sauce

1 can 28 oz Diced Potatoes
1/2 can Carrots
1/4 Cup Cashew Butter
4 Tablespoons Nutritional Yeast
2 Teaspoons Garlic Powder
1/2 Onion Powder
2 Teaspoons Salt
1/4 Teaspoon Cayenne
1 1/2 Cups Vegetable Broth
1/2 Cup Plant Milk
(Added 1/2 teaspoon of dried mustard powder,1 teaspoon white wine vinegar and 3 teaspoons diced garlic from a jar to Nicole's daughter's recipe)--delicious

Blend for 1 minute or until smooth

12/6/24  (Added 1/2 teaspooon dried mustard and 1 teaspoon smoked paprika to batch)  I did not have garlic powder.  So I added a bunch of garlic.  I used Tahini instead of cashew butter, and I was running short possibly.  So I added olive oil.  I used 75% of salt indicated.

DOUBLE BATCH MADE 12/6/24 = Recipe x 2

CREAMY DREAMY VEGAN MAC AND CHEESE

1 lb dried macaroni
2 yellow potatoes, peeled and diced
2 carrots diced
1 onion diced
1 cup of boiled liquid
1 cup raw cashews
1/2 cup coconut milk
3 TBS nutritional yeast
1 TBS lemon juice
spices
5 cloves garlic

1.  Boil potatoes, carrots and onions until tender.
2.  Boil macaroni.
3.  Add all ingredients except pasta to blender.
4.  Blend until smooth and taste is where you want it.
5.  Mix in pasta>
6.  Top with breadcrumbs if you desire and bake until bubble 15 minutes if you desire
