Cashew Cream Sauce
1 Cup Roasted or Raw Cashews
Water
Vegetable broth or Vegetable Bullion Cube
For 3/1/21, I roughly tripled the recipe. In my haste, I forgot to add vegetable broth or the bullion cube.
* I soaked half a container of roasted cashews in water during the day. The recipe call for overnight or at least one hour of soaking. I drained he cashews.
* I add hot water from the cooking pasta.
* I blended it until it was creamy.
* Salt some to taste
I cooked pasta in water with salt and olive oil added.
Add sauce and cooked pasta together.
Vegan Yogurt Dressing
1 Container of Kite Hill Vegan Greek Style Yogurt
1 Tablespoon Lemon Juice
1 Tablespoon Apple Cider Vinegar
I tripled the recipe for 3/1/21. I hand stirred the ingredients together and set aside while I prepared the vegetables.
* Spiralized zuchini
* Cherry tomatoes
* Sunflower Seeds
I mixed dressing together with vegetables and salted to taste. I cut up vegetables 2 hours before because I wanted them fresh. In the past I have cut up vegetables at 7am for a 6pm event and the vegetables/salad was still in good condition.
