Vegan Collard Greens (over 10 side servings)


Vegan Collard Greens

1 Bunch Collard Greens
1 Onion
2 Tomatoes—Remove seeds and chop
1 Teaspoon red pepper flakes
1 Box Vegetable Broth
Olive Oil

Chop the onions.  Cook the chopped onions in olive oil until translucent.  Add the chopped tomatoes and teaspoon of red paper flakes.  Stir and salt very well (4 applications). 
Clean the collard greens.  Cut them into manageable sized pieces.  Put them in crock pot.  Pour in 1 box of vegetable broth.  Add the cooked onion/tomato mixture.  Cover and cook on high until the collards are cooked all the way through.
