Ube Brownies

Ube Jam
1 cup Ube Powder 
2 cups water 
2 cups Chef Jana's recipe vegan sweetened condensed milk 

 Dissolve the ube powder in the heated water stirring. Heat is on medium. After the ube powder appears rehydrated (is not gritty), you can add the vegan sweetened condensed milk. Keep stirring. I stirred a lot over the heat (30 minutes--probably unnecessary).  This thickens after 6 minutes of heat; and it thickens overnight from being in the refrigerator. 


  Vegan Sweetened Condensed Milk
1/3 cup sugar
 1/3 cup boiling water (must be boiling) 
1 1/2 cup vegan milk powder (I used coconut milk powder.) 

 Put all three in a container and blend. Chef Janna used an immersion blender. Be careful not to tip over bowl with the immersion blender. WASTEFUL! 


  Ube Brownies        Makes  one  9x13 pan of not flat brownies
2 cups ube jam 
2 and 1/2 cup plain flour
 1 cup white sugar
 1 and 1/2 cup melted butter (I increased the butter by 1/2 cup to make the mixture more stirable.) 
1 teaspoon baking powder
 1/4 cup brown sugar 
2 teaspoons Ube extract 
1 teaspoon salt 1 Chia seed egg (1 Tablespoon of Chia seeds mixed with 3 Tablespoons hot water)
 1 Cup White Chocolate Chips 

 Heat oven to 350 degrees F. Bake for 40 minutes. Cool completely before slicing.
